Sometimes I Bake: Lazy Lemonade Brownies & Mookies

So the other day I found this pin:

And I thought that pretty much looked fabulous. Man I love treats. This week has been SO full of them. Friends for dinner Tuesday night, playgroup at my house Wendesday (cupcakes), drinks for 7-year-old's first grade class Valentine's Day party (raspberry sherbet + Sprite), cookies for a valentine for my husband ... yes, I'm gaining weight just listing all this stuff!


So, back to Tuesday night. We ordered pizza and I was looking over my pins for a good, simple treat to go with it. I stopped on the lemonade brownies and thought, yum! But kind of complicated. Then I remembered a certain lemon cake mix in my pantry and this pin - cake mix brownies.

I got out my lemon cake mix, added 1/4 c. of coconut oil (because I'm healthy like that lately), 1/3 c. milk (I never use water in these kinds of recipes), and an egg. I made the frosting according to the lemonade brownie recipe, and let me tell you, they turned out fabulous. The whole pan was gone by the following afternoon. And best? It took about five minutes to throw together.

Today, I've got a double dose of my fun-loving recipes. Have I mentioned that I'm on a healthy kick? Basically because my SIL recruited me for a losing-weight-after-babies thing. She's good (in a she-hates-me sort of way) like that. Always making sure I'm exercising ... :D (In all honesty, I love her to death.)

On to "Mookies." My mom made these for us growing up just to change things up a little. (Hey, eight kids later, meals like pancakes, muffins, and oatmeal get a little boring day to day ...) They're just muffins cooked like cookies. (Eh-hem, MMMoookies, get it? I knew you did. You guys are smart.) Well, I gourmet-ed up the recipe a little. Not really, but kind of.

I took my basic muffin recipe from my trusty "Better Homes and Gardens" cookbook I got for my wedding. So you can use yours favorite too. I just made sure to use a little less liquid to give the batter more thickness. I also used coconut oil again (it gives baked goods this lovely fluffiness!), added some oatmeal (and of course cinnamon), and cut half the sugar and used applesauce. The Mookies were also fabulous and the entire batch was gone by 10 a.m. No joke. The boys loved them. I loved them.

I've been writing since I was old enough to grasp a crayon--my grandma even has an early copy of a "book" I made her. I have a bachelor's degree in history from the University of Wyoming and will (hopefully) soon be starting a graduate program in English.
